Cabbage-infused Gin
RECIPE
This recipe is adapted from the amazing book, Liquid Intelligence by Dave Arnold (highly recommend!).
Ingredients:
150 g purple cabbage, sliced into thin strips
6oz London dry gin
Dehydrate cabbage strips until they are ~10% of their original weight (if you don’t have a dehydrator, you can use your oven on lowest setting placing the pan on the highest rack available). Add dehydrated cabbage and gin to blender and blend on highest setting for 30-60 seconds depending on blender. Pass mixture through fine mesh strainer, then pass again through coffee filter. Bottle and refrigerate.
