Cabbagetown
No, this drink doesn’t contain cabbage. If you actually thought it might, then I’m doing something right on this page😆 (and yes, I would totally accept that challenge).
This drink is a riff on the Toronto (rye/fernet/syrup), so I called on my friend @sidds.pix for some Toronto neighborhoods. Cabbagetown (sweet name right?) isn’t too far from Toronto proper, and this riff is not far from the original. It’s a revitalized area that still retains a lot of its older, Victorian architecture. And from what Google tells me, it’s kinda… fancy, with farmer’s markets, trendy coffee shops, and higher-than-average priced homes.
I’m not saying this is better than the classic, but I do like it more. The two whiskeys work beautifully together, with the Balcones bringing some lovely chocolate notes that match the branca. The Braulio/Fernet play together nicely and smooth out some of the bitter edges without losing any depth. The bitters accent the chocolate notes even more and along with the demerara, give considerable depth of flavor. It’s a rich, complex, lovely sipper that is not too far away from the original.
Recipe
2oz rye whiskey (split of @clydemayswhiskey and @balconesdistilling)
0.75oz split Fernet Branca (@fernetbranca) + Braulio Amaro
0.25oz demerara syrup
1 dash each scrappy aromatic/chocolate bitters (@scrappysbitters, gifted)
Stir all ingredients until chilled, strain into pre-chilled single OF glass, garnish with orange twist. Cheers!!
