The Underground
Let me start off by saying that this drink is SO tasty. I love stirred agave drinks, in part because there just aren’t that many out there. Tequila is good for so much more than sour-style (re: marg/paloma) drinks! If you haven’t had many, then give this one a spin.
Using a reposado gives some light vanilla/oak notes that provide a perfect backdrop for the chili and coffee notes. These help draw out the lovely mole spice profile from a delicious new bitters kindly sent by @feebrothersofficial. A touch of Fernet ties it all together by adding some earthy bitterness that works beautifully with coffee and chocolate. It’s an old fashioned style drink that is surprisingly light despite its complex flavors.
