Peachy Green Syrup


Recipe

  • 115g white sugar (~1/2cup)

  • Peels of 2 medium lemons, piths removed

  • 1 medium peach, sliced (~130g)

  • Lemon-forward herbs of choice (I used 6 sprigs lemon thyme, 10 lemon balm leaves) and 2 bay leaves

First, muddle lemon peels and sugar. Let sit for ~2 hours. Add peach and muddle again. Add herbs and stir. Cover and refrigerate, stirring occasionally, for 1-2 days. Fine strain, bottle, and refrigerate.
