Spiced Grenadine

Recipe

8oz fresh pomegranate juice (250g)

  • 250g cane sugar

  • 1 cinnamon stick (3g)

  • 6 cardamom pods (0.8g)

  • 8 cloves (0.8g)

  • 1/4tsp ground ginger (0.6g)

  • 10 black peppercorns (0.5g)

  • 0.4g fennel seeds

  • 0.3g coriander seeds

  • 0.3g ground all spice

  • 0.4g freshly grated nutmeg (include some mace)

  • 2 strips orange peel

  • 1tbsp pomegranate molasses or 1.25g citric acid + 1.85g malic acid (recommended by Death & Company)

Combine all ingredients and seal in a vacuum seal back. Place in sous vide at 135F for 90 min. Strain, bottle, refrigerate.
